WHere is a simplified version of a beverage found on a new menu. Designed as a party-sized pre-mixed that's loaded full of essence of the Christmas time, rendering it ideal for a festive gathering. Reserve the remaining cordial for breakfast cocktails, sweets, or for another batch of the drink.
Bikini Recipe
Yields 10 people
To make the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Put all the ingredients into a pan, bring to a gentle boil, mixing so the sugar melts. Next, remove from the stove and let it to reach room temperature fully. Transfer into an sterilised bottle, seal and store chilled, it will last for about four weeks.
To make Premix: Pour all the liquids into one large bottle, let it rest for 60 minutes, then strain preferably using cheesecloth, to ensure it's completely strained.
To serve: Measure 85ml of the cocktail base into a cocktail shaker containing ice, and stir carefully for about 60 seconds to chill. Filter into an frosted cocktail glass or similar, garnish with some cranberries and finish using a brief mist of the essential oil over the top.
